Space Engineers ships a free Windows-only dedicated server tool (DedicatedServer64). It is CPU-bound rather than RAM-hungry, because voxel physics and collision lean on single-thread speed, so plan for a few fast cores (3.0GHz+), 8 to 16 GB of RAM, and roughly 10 GB of disk. No GPU needed. Linux needs Wine.
